Boozy Lamb in 2 Ways.

FRIYAY!

We are making 2 different types of Lamb so hold onto your seats. We are about to turn up quite literally.

I have always been a huge fan of lamb but I have never really brought myself to making it. So I decided to challenge myself and I called my trusted meat guy and asked for a kg of lamb ribs. Best decision ever! When they came in I had no idea what to do with them so as usual, I marinated them and threw them into the fridge. I split them into half because I wanted to try out two different ways for the same meat.

Funny thing is I don’t drink alcohol in my house so I will always have booze lying around that I often throw into my pot to create a whole new flavor profile to the dish.

My first meal

Mary’s Whiskey Chops

Lol ok that’s a horrible name, I was thinking about Mary and her little lamb. So DEAL! This was such a simple meal to make yet so full of amazing flavors.Any meal made with booze and butter is about to be a treat for the tummy. Putting this meal together was basically trial and error. I always say that well seasoned dishes will always impress but when you build flavors as the dish goes along then you will definitely knock peoples socks of.\

I started by searing(throwing the ribs into a hot pan with some heated oil.) This creates a beautiful brown coat that’s just beautiful and golden. Lamb ideally takes a very short time to cook you don’t want to ruin a good cut of meat by killing the animal again am I right? Next up add in two spoons of unsalted butter and really coat the ribs, then add in the brandy to baste the dish. This really gives it a nice deep and rich flavor. The alcohol cooks out and leaves this gorgeous coat on the ribs. The aroma is absolutely incredible. Voila, serve while hot! I had mine with a delicious salad and because 1/2 kg is a lot , I made some tacos the day after which I will be sharing soon.

So this meals has the basics of every stew, it took over 45 minutes to simmer to create this beautiful dish. I was learning as I went along. Let me just say! YUM! I really enjoyed creating this meal, so as usual I started with my onions and garlic. I used scotch bonnets for that extra heat because I wanted to really create a whole flavor profile! Whenever you have ugali and some choma you always have it with a beer. Same exact concept, so once my onions and garlic and chilies had married in the spices I had chosen. I then added the lamb to my pot. It was absolutely incredible the aroma in my kitchen. OH BOY!Please try this out.

Next step was definitely to add in the beer and some water( What I learnt from this, because there is no thickening agent to give you that thick stew, mix some hot water with some corn starch and then pour it in) This would be a crucial step to go along. Keep tasting and building that flavor to get just the right flavors in your dish. No one wants a flavorless meal boo. Get to tasting!

That’s alcohol abuse to make lamb with J P Chenet. You should use white cap only 🙂

    • lol , i’ve tried it with White cap wasn’t crazy about the flavor profile. Also I like o use what I drink, so it only made sense to use a good brand.

  • Ruman Kuria

    I need to try this.
